omlet biszkoptowy po grecku

Ingredients:

3 jaja
płaska łyżka mąki
2-3 łyżki mleka
szczypta soli
ok 125 g sera feta
ok 50-70 g oliwek bez pestek (najlepiej czarnych)
kawałek ogórka zielonego, pomidor
zioła prowansalskie
oliwa z oliwek

Prepare instructions:

przygotować składniki: ogórek i pomidor pokroić w cienkie plasterki, oliwki w połówki lub ćwiartki, ser feta w plastry
żółtka jaj oddzielić od białek, dodać mąkę, mleko, sól, zmixować
białka z odrobiną soli ubić na sztywną pianę
delikatnie i dokładnie wymieszać białka z żółtkami
na patelni rozgrzać 1-2 łyżki oliwy, wyłożyć masę i podsmażyć omlet z jednej strony
obrócić omlet na drugą stronę (można dolać trochę oliwy), ułożyć na całej powierzchni plastry sera, posypać ziołami prowansalskimi, smażyć chwilę pod przykryciem, na małym ogniu, aż spód się zarumieni (pod koniec można nieco zwiększyć ogień)
omlet przełożyć na talerz, ułożyć na wierzchu plasterki ogórka i pomidora oraz oliwki i spożyć (porcja dla 1-2 osób) :)

omlet ten nazwałam "greckim" ze względu na użyte składniki typowe dla kuchni śródziemnomorksiej ale przepis wymyśliłam sama (może istnieje już tego rodzaju wariant omleta biszkoptowego ale mi nic o nim nie wiadomo;)) smacznego!
