Barszcz czerwony z botwinką

Ingredients:

1 pęczek botwinki z buraczkami
1 cebula
1 marchewka
1 pietruszka
sól, pieprz
siekany koperek
wywar warzywny lub drobiowy (ok 2,5 litra)
2 łyżki śmietany do zup
kilka ziarenek ziela angielskiego
1 liść laurowy
odrobina octu lub soku z cytryny

Prepare instructions:

1. Do wywaru dodajemy opłukane i pokrojone warzywa: marchewkę, pietruszkę i cebulę, a także ziele angielskie, liść laurowy. Gotujemy do miękkości.
2. Botwinkę i buraki myjemy dokładnie, liście tniemy na średniej szerokości paseczki, a obrane buraczki ścieramy na tarce jarzynowej.

3. Kiedy warzywa będą miękkie dorzucamy tarte buraki i pokrojoną botwinę. Chwilkę gotujemy. (Jeśli buraczki były bardzo malutkie i barszcz jest mało czerwony, to można dodać odrobinkę koncentratu buraczanego).
4. W osobnym naczyniu mieszamy śmietanę i 1 chochlę gotującego się barszczu, a następnie przelewamy do garnka z zupą. Doprawiamy octem, solą i pieprzem, a na koniec dodajemy posiekany koperek - ilość wedle uznania.
5. Barszcz podajemy z ugotowanymi ziemniakami - najlepiej młodymi.

Bardzo dobry barszcz-botwinka. Ziemniaki ugotowałam bezpośrednio w zupie. Zrobię jeszcze nie raz chef
