Czekoladowe ciasto ruy-blas

Ingredients:

60 g masła, pokrojonego w kostkę
250 g gorzkiej czekolady, połamanej na kawałki
250 g drobnego cukru
125 g mielonych migdałów
90 g maki ziemniaczanej
6 jajek, żółtka oddzielone od białek
szczypta soli

Prepare instructions:

Masło i czekoladę rozpuszczam w kąpieli wodnej. Kiedy to nastąpi dodaje, cukier, mielone migdały i make, dokładnie mieszam. Następnie dodaje po kolei po jednym żółtku, dokładnie ucieram.
Białka ubijam ze szczypta soli na sztywno, dodaje do masy czekoladowej. Mieszam delikatnie aby nie złamać piany przy pomocy dużej łyżki.
Gotowa masę przelewam do tortownicy lub wysokiej formy z kominem (o średnicy 23 cm) wysmarowanej masłem. Piekę w 160 st ok 45 min, do suchego patyczka.

Upieczone ciasto studzę w formie na kratce kuchennej, następnie przekładam na talerz.
