Ingredients:

Kurczak (powyżej 1 kg).
Farsz:10 dag wieprzowiny bez kości, 10 dag cielęciny, 10 dag serduszek z kurczaka,15 dag watrobki drobiowej, 1 sucha mała bułka namoczona w mleku i odciśnięta, 1 ząbek czosnku 4 jajka, pęczek natki pietruszki, sól, masło, pieprz, majeranek.

Prepare instructions:

Kurczaka natrzeć z wierzchu solą, wstawić do lodówki. Skręcić w maszynce wieprzowinę, cielęcinę i serduszka razem z bułką. Wątróbkę usmażyć na maśle, uważając, żeby się nie rozpadła. 3 jajka utrzepać, dodać szczyptę soli i pieprzu, usmażyć na maśle pulchny omlet. Do zmielonego mięsa dodać zmiażdżony czosnek, omlet i wątróbkę pokrojone w drobną kostkę, 1 jajko, łyżkę posiekanej natki pietruszki, wymieszać, doprawić do smaku solą, pieprzem i majerankiem. Kurczaka nabić farszem, zaszyć otwór. Całego kurczaka dookoła wysmarować masłem, ułożyć w brytfannie, piec do zrumienienia w 180 st.C, podlewjąc co 10 min sosem spływającym do brytfanny, lub gdy jest go mało - wodą. Podawać pokrojonego na plastry wraz z nadzieniem. (Przepis wg Miry z Chorzowa)

A co z kośćmi ???????

Kostki trzeba wyjąć. Można z całego kurczaka nie rozcinając go (co jest trudniejsze) lub tak jak w tym przepisie http://www.wielkiezarcie.com/artykul.php?id=201.
Kostki można potem wykorzystać do przygotowania zupy.
