Sztufada na zimno

Ingredients:

- 1 kg wołowiny ( gruby, krótki kawałek),
- 1 kieliszek czystej wódki,
- 1 łyżeczka majeranku,
- 4 - 5 goździków,
- 5 - 6 ziarenek ziela angielskiego,
- 1 listek laurowy,
- 1 łyżeczka masła,
- 1 łyżeczka smalcu,
- sól,

Marynata:
- 1 szklanka czerwonego wytrawnego wina,
- sok z 1/2 cytryny,
- 2 cebule,
- po 10 ziarenek: ziela ang. i pieprzu,
- 2 listki laurowe,

Zamiast wina i cytryny może być szklanka mocnego octu winnego i szklanka wody.

Prepare instructions:

Zagotować marynatę.
Mięso mocno wygnieść ręką, ułożyć w kamiennym garnku, zalać przestudzoną marynatą, zostawić na 3 - 4 dni w chłodnym miejscu, ale codziennie przekładać je na drugą stronę, aby się równo zamarynowało.
Wyjęte z marynaty mięso opłukać,osuszyć ściereczką, natrzeć solą.
W rondlu rozgrzać tłuszcz, zrumienić ze wszystkich stron mięso, posypać majerankiem, dodać przyprawy korzenne, skropić wódka, podlac 2 - 3 łyżkami wody i dusić pod przykryciem na niewielkim ogniu, często skrapiając przecedzoną marynatą.

Sztufadę podawać na zimno, pokrojoną w cienkie plastry z korniszonami lub marynowanymi grzybkami, albo ostrymi sosami.

Słuchaj saburg a może weż do ręki poradniki domowe.. ja je mam , bo prenumerowałam... i poczytaj...

Hm. Tereso, więc jeśli to jest coś z Poradnika Domowego, należałoby to napisać przy przepisie. Jeśli na pysznie.pl ktoś tego też nie zrobił - również popełnił błąd.

Ale istotą sztufady jest szpikowanie słoninką, a nie kąpiele w marynacie...
