Robię bardzo podobnie, tyle, że bez chleba. Chleb często powoduje, że powstaje grzyb. Bez chleba też się ukisi.

Nie zdarzyło mi się,żeby żur się nie zakisił.Być może winna jest zbyt niska temperatura Twojego zakwasu.Wcale nie kiszę go w tym samym naczyniu,a zawsze go myję.Nie wyobrażam sobie,żeby stał niemyty np kilka tygodni czy miesięcy.A..jeszcze jedno,czasem 3 czy 4 dni to może być za mało.
