Ślimaczki z ciasta francuskiego z nadzieniem z pesto

Ingredients:

ŚLIMACZKI:
ciasto francuskie (400-450 g)
pesto alla genovese (albo inny rodzaj pesto), dla ambitnych: domowe pesto

DOMOWE PESTO:
2 ząbki czosnku
1/2 szklanki uprażonych na suchej patelni orzeszków piniowych
1 szklanka startego parmezanu
1 szklanka startego sera pecorino romano
4 szklanki liści bazylii
5 łyżek oliwy
1 łyżeczka pieprzu
sól do smaku

*1 szklanka to ok 250 ml
** 1 łyżka to ok 15 g
*** 1 łyżeczka to ok 5 g

Prepare instructions:

Wykonujemy pesto: w blenderze lub malakserze siekamy czosnek, dodajemy orzechy, oba sery, dużą garść ziół i łyżeczkę pieprzu. Miksujemy na gładką masę, dalej miksując wrzucamy resztę ziół. Na końcu wlewamy oliwę i miksujemy aż wszystko się połączy. Solimy do smaku.

Robimy ślimaczki: ciasto rozwijamy albo wałkujemy na prostokąt. Smarujemy pesto, z jednej strony pozostawiając wolny brzech o szerokości 1 cm. Zwijamy, zaczynając od strony z pesto. Rulon kroimy w plasterki o szerokości 1,5 cm. Układamy na blasze wyłożonej pergaminem i pieczemy przez ok. 15-20 w temperaturze 200ºC. Smacznego.

* Uwaga! Świeże pesto szybko brązowieje, aby temu zapobiec, domowy sos w słoiczkach zalewamy cienką warstwą oliwy. Trzymamy w lodówce do 2 tygodni.

Zainspirowana przepisem, zrobiłam ślimaki. Od siebie dodałam drobno pokrojone suszone pomidory. Ślimaki stały się obowiązkowym elementem każdej imprezy. Polecam.
