Zupa z darów jesieni z tajską nutą

Ingredients:

pół małej dyni

5 pomidorów

2 małe cukinie

2 ząbki czosnku

2 cm kawałek świeżego imbiru

400 ml mleka kokosowego

pół łyżeczki kurkumy

pół łyżeczki nasion kolendry ( rozgnieść w moździerzu)

szczypta chili i cukru

sól

natka pietruszki

olej lub oliwa do smażenia

Prepare instructions:

Szukając przepisu na jakieś oryginalne danie z dyni, na blogu "smakoterapia" natknęłam się na tą zupę. Jest pyszna i bardzo aromatyczna. Spróbujcie!

Dynię obrać i pozbawić nasion, pokroić w kostkę. Pomidory obrać i pokroić w kostkę. Cukinię też pokroić w kostkę, jeśli jest młoda można jej nie obierać.

W garnku rozgrzać tłuszcz. Wrzucić posiekane drobno imbir i czosnek. Po chwili dodać dynię, kolendrę i kurkumę, poddusić aż dynia zmięknie, w razie potrzeby podlać wodą. Wrzucić pomidory, chwilę poddusić aż zaczną się rozpadać. Podlać 2 szklankami wody, dodać cukinię. Gdy cukinia zmięknie, wlać mleko kokosowe, zagotować, doprawić do smaku chili, solą i cukrem.

Przed podaniem posypać natką pietruszki.
