Ingredients:

świeży chudy płat boczku
czosnek
majeranek
pieprz czarny
sól peklowa

Prepare instructions:

Boczek przygotowujemy poprzez nacięcie mięsa w taki sposób, aby otrzymać jak najdłuższy płat ( czyli najpierw nacinany mięso przez środek tak aby go nie przeciąć na pół, potem nóż kierujemy w połowie grubości mięsa i tniemy do boku. Powtarzamy czynność po drugiej stronie )

Rozcięty boczek posypujemy po obu stronach solą peklową w proprcji 20 gram na 1 kilogram mięsa. Następnie pozostałe przyprawy także po obu stronach. Nie podaję ilości przypraw gdyż to cecha indywidualna smakoszy.

Następnie boczek ściśle zawijamy, związujemy sznurkiem bawełnianym i pozostawiamy w lodówce na 24 godziny zawinięty w folię spożywczą lub aluminiową.

Następnie boczek pieczemy a właściwie dusimy w piekarniku w temperaturze 190 stopni przez 2,5 godziny. Ważne aby podczas pieczenia boczek był pod przykryciem. Ja piekę na blażce przykrytej folią aluminiową

Boczuś smaczny a ten tłuszczyk co się wytopił jeszcze lepszy :) Piekłam równe 2,5godziny pod koniec zdjęłam folie i włączyłam termoobieg z grilem żeby miąsko się zrumieniło.

To chyba za sprawą soli peklowej ma taki piękny czerwony kolor. Ale jest jak najbardziej upieczony:)
