Curry wegetariańskie z ziemniaczkami i kalafiorem

Ingredients:

- ½ kalafiora średniego podzielonego na różyczki,
- 1 posiekana cebula,
- 500g ziemniaków pokrojonych w kostkę,
- 1 szklanka zielonego groszku ( nie z puszki!!!)
- 3 posiekane ząbki czosnku,
- 1 jabłko pokrojone w kostkę, bez skórki,
- 150 ml mleka kokosowego,
- 280 ml bulionu warzywnego,
- 2 łyżki oliwy,
- 2 łyżeczki curry,
- 1/3 płaskiej łyżeczki chili,
- świeża kolendra, ew. natka pietruszki,
- sól, pieprz, papryka.

Prepare instructions:

W wysokiej patelni lub dużym rondlu rozgrzać oliwę, dodać do niej cebulę, czosnek, curry, chili i smażyć, ciągle mieszając około 2-3 minut.

Następnie dodać jabłko, ziemniaki, groszek, mleko kokosowe oraz bulion warzywny i gotować ok. 8 minut na wolnym ogniu. Po tym czasie, dodać kalafior i "pyrkotać" tak długo, aż wszystkie składniki będą miękkie (ale nie rozgotowane !!).

Na końcu przyprawić do smaku solą, pieprzem, kolendrą i ew. papryką.

Bardzo proste i szybkie danie. Bardzo aromatyczne - polecam zwolennikom ostrej kuchni. Curry najlepiej jest jeść na ciepło, ale zimne też smakuje wyśmienicie.

Właśnie zrobiłam, zjadłam - bardzo dobre :) Pominęłam jedynie jabłko, bo nie lubię. Następnym razem może dodam piersi z kurczaka
