Golonka po hajducku

Ingredients:

4 golonki (ok. 1 kg),
25 dag pieczarek,
3 czerwone papryki,
2 łyżki koncentratu pomidorowego,
1 łyżka mąki,
2 łyżki smalcu,
1 lyżeczka suszonego rozmarynu,
1 łyżeczka suszonego majeranku,
2 ząbki czosnku,
sól i pieprz.

Prepare instructions:

Golonki oczyścić, opalić, umyć i osuszyć. Natrzeć przyprawami. Odstawić na 1 godz. Oprószyć mąką. W rondlu rozgrzać smalec. Obsmażyć na nim mięso ze wszystkich stron na złoty kolor. Podlać niewielką ilością wody. Dusić do miękkości (w miarę potrzeby podlewając wodą) przez ok. 1-2 godz. Pod sam koniec duszenia gdy mięso prawie miękkie dodać pozbawioną gniazd nasiennych i pokrojoną w kostkę paprykę, umyte i pokrojone w plasterki pieczarki, przeciśnięty przez praskę czosnek i koncentrat pomidorowy. Doprawić solą i pieprzem. Nadal dusić. Gdy golonki będą miękkie wyjąć i ułożyć na półmisku. Sos przetrzeć przez sito lub zmiksować. Polać nim golonki.
