Królik duszony po czesku

Ingredients:

1 królik
100 g słoniny
1 cebula
3 łyżki masła
1 listek laurowy
kawałek skórki z cytryny
1 łyżeczka soli
po 6 ziarenek czarnego pieprzu i ziela angielskiego
1/2 łyżeczki tymianku
2 łyżki mąki
2 łyżki octu winnego z czerwonego wina
1łyżka cukru pudru

Prepare instructions:

Królika umyć, osuszyć, podzielić na 8 porcji. Natrzeć namoczoną w occie ściereczką. Cebule obrać. Słoninę i cebulę pokroić w kostkę. W brytfannie wytopić słoninę, dodać łyżkę masła i przesmażyć cebulę. Dodać przyprawy, skórkę z cytryny i sól. Włożyć kawałki mięsa. Zalać ciepłą wodą. Dusić pod przykryciem na małym ogniu przez 1 1/2-2 godz. Pozostałe masło stopić w rondelku, wsypać mąkę, wymieszać na gładką masę. Stopniowo dolewać tyle płynu z duszenia, aż powstanie gęsty sos. Dodać ocet i cukier. Mieszając gotować 5 min. Królika wyjąć z rondla, trzymać w cieple. Pozostały płyn z duszenia przecedzić do rondelka, zagotować. Porcje mięsa przełożyć na ogrzany półmisek, polać sosem.

Na ten przepis wpadłem dawno, dawno temu. Pierwszym razem musiałem trochę popracować nad daniem, nie lubimy słodkich potraw. Poszło dużo tymianku do sosu. Od tamtej pory robiłem królika na kilka sposobów np. piekłem w piekarniku, robiłem wg Jamiego królika z essex, lasagne wg Allegry itd i stwierdziłem, że najlepszy królik to właśnie ten po czesku bahusa.
