Wiedeńska zupa ziemniaczana Makłowicza

Ingredients:

4 duże ziemniaki
1,5 l bulionu wołowego
1 marchewka
0,5 małego selera
4 suszone prawdziwki
100 g wędzonego boczku
2 cebule
2 łyżki masła
0,25 szklanki śmietany
1 ząbek czosnku
szczypta majeranku
pęczek szczypiorku
2 łyżeczki octu winnego
sól, pieprz

Prepare instructions:

W garnku rozgrzać sklarowane masło i obsmażać na nim, przez 2 – 3 minuty chudy bekon. Dodać pokrojoną w kosteczkę cebulę, drobno posiekany czosnek, pokrojoną w kostkę marchew oraz seler korzeniowy. Wsypać nieco mąki, mieszać ok. 1 minuty i wlać wodę z drobno posiekanymi prawdziwkami, które uprzednio zalano wrzącą wodą. Mieszając, wlać mocny bulion wołowy, zagotować. Dodać pokrojone w kostkę ziemniaki. Gotować, aż ziemniaki będą miękkie. Wsypać roztarty w dłoniach majeranek. Po 10 minutach wlać osoloną, zahartowaną kwaśną śmietanę. Dodać odrobinę octu winnego, posypać posiekanym szczypiorkiem.

Zupę gotuję dość często bo jest naprawdę dobra. Jak nie mam suszonych prawdziwków dodaje podgrzybki.
