Ingredients:

zaczyn:
5 dag drożdży
1 szkl. mąki żytnia
szklanka letniej wody

ciasto chlebowe:
1/2 kg mąki żytniej
20 dag mąki pszennej
szkl. otrąb ok.
1/2 l wody
kminek mak sól
smalec do wysmarowania blaszki

Prepare instructions:

Zanim przystąpimy do pieczenia chleba przygotowujemy zaczyn: Drożdże rozpuszczamy w letniej wodzie i mieszamy z mąką. Czekamy do wyrośnięcia. Kiedy zaczyn wyrośnie dodajemy do niego pozostałą mąkę żytnią i pszenną, sól, otręby i kminek i długo (ok. 0,5 h) wyrabiamy. Po wyrobieniu ciasto odstawiamy na ciepłe miejsce do wyrośnięcia na około 40 minut. Blaszkę smarujemy smalcem, przekładamy ciasto, posypujemy makiem i odstawiamy w ciepłe miejsce, przykrywając ściereczką na kolejne 0,5 h. Wyrośnięty chleb pieczemy w dobrze nagrzanym piecu chlebowym lub piekarniku (około 200 st. C) przez godzinę lub półtorej.
