W książkowym przepisie autor nie podawał jaka ma być śmietana - ja użyłam 18%.

Jak długo utrzymują świeżość? Można je upiec kilka dni wcześniej?

Czasu trwania świeżości nie potrafię określić, bo dość szybko zniknęły. Ale wydaje się mi, że można je upiec wcześniej i przechowywać je pod przykryciem.
