Empanadillas - pierożki hiszpańskie

Ingredients:

Ciasto:
100 ml białego wytrawnego wina
po 25 g masła i smalcu
1/2 łyżeczki soli
300 g mąki
mąka do podsypania

Farsz:
250 g mielonego mięsa
1 cebula
1/2 strąka papryki
olej
1 puszka koncentratu pomidorowego
sól, pieprz

Prepare instructions:

Wino i 100 ml wody podgrzać w rondlu (nie gotować!), dodać smalec i masło. Zdjąć z ognia, wsypać mąkę i sól. Wymieszać. 2 łyżki maki wsypać do miski, włożyć ciasto, wyrabiać przez 10 min. Uformować kule, przykryć, odstawić na 2 godz. Cebulę obrać, posiekać. Paprykę drobno pokroić. Na patelni rozgrzać 2 łyżki oleju, wrzucić cebule, usmażyć. Dodać mięso i paprykę, oprószyć pieprzem i solą, dusić ok. 20 min, w połowie duszenia dodać koncentrat pomidorowy. Stolnicę posypać mąka, rozwałkować na niej ciasto. Wyciąć koła o średnicy ok. 15 cm. Do każdego koła nakładać farsz, ciasto złożyć na pół, brzegi ścisnąć. Na głębokiej patelni rozgrzać olej, smażyć pierogi z obu stron na złoty kolor, osączać na pergaminie.

Ile pierożków wychodzi z tego przepisu? Starczy na 2 osoby?

Mi wychodzi zawsze kilkanaście, ale robię je o średnicy 10cm. Są bardzo syte. Mam pytanie - w jaki sposób je smażycie, aby równo się przyrumieniły?

Pierożki są fenomenalne! :) Robiłam je już kilka razy i zawsze wychodzą pyszne. Byłabym tylko wdzięczna za radę - jak je smażyć, żeby zarumieniły się równo? Często mam z tym problem.
