Ozór wołowy peklowany

Ingredients:

1 ozór wołowy,
2 g saletry lub zaprawy "Peklowit",
pół łyżki kolendry,
pół łyżeczki zmielonego białego pieprzu,
soda.
Zalewa:
2 l wody,
400 g soli,
0,2 l octu,
2 ząbki czosnku,
pół cebuli pokrojonej w plasterki,
4 liście laurowe,
10 ziarenek pieprzu

Prepare instructions:

Ozór umyć, wyciąć gruczoły ślinowe. Natrzeć saletrą, kolendrą i zmielonym białym pieprzem. Zalewę zagotować i schłodzić. Włożyć do niej ozór i peklować 8 do 10 dni w chłodnym miejscu, przewracając dwa razy dziennie. Po zapeklowaniu, ozór ugotować w wodzie ze szczyptą sody, włożyć do zimnej wody i obrać ze skóry. Pokrajać w plasterki i podawać na zimno.

Mam takie małe pytanie, czy ten ocet jest w zalewie konieczny i czy będzie potem (po okresie peklowania) bardzo wyczuwalny w smaku? czy nie będzie ten ozorek kwaśny? Nigdy nie peklowałam ozora tylko go gotowałam, a teraz chciałabym go właśnie zapeklować.
