hej, sałatka przepyszna ale sos majonezowy mi się zwarzył-rozdzieliły sie składniki w czasie miksowania-dlaczego?

Agutek,wprawdzie tego sosu nie robilam,ale majonez czesto robie sama .Wiem stad,ze skladniki powinny miec te sama,pokojowa temperature i do utartych (zmiksowanych) zoltek olej wlewa sie bardzo powoli,zaczynajac od kropel.Moze w przypadku sosu tez przyczyna byla w nieodpowiedniej temperaturze?Nawet jak majonez sie zwarzy,mozna go uratowac.Trzeba utrzec nowe zoltka i pozniej po troszeczke dodawac ten zwarzony.Moze i z tym sosem daloby rade?
