Ingredients:

1 kg boczku bez żeberek
Zalewa: 1 l wody, 5 dag soli i 4 g (pół łyżeczki) saletry. Zamiast tego można użyć 5 dag gotowej soli do peklowania (jest w działach przypraw w supermarketach). Przyprawy (według Twojego smaku), najczęściej: 2 zmiażdżone ząbki czosnku, duży liść laurowy, czubata łyżka majeranku, pół łyżeczki mielonej kolendry, pół łyżeczki mielonego pieprzu, czubata łyżeczka cukru, czubata łyżeczka suszonej cebuli.

Prepare instructions:

Peklowanie (na mokro): w 1 litrze wody rozpuścić sól, saletrę i dodać przyprawy. Zalewę zagotować i ostudzić. Opłukany boczek włożyć do zalewy i trzymać w chłodnym miejscu minimum 5 a maksimum 7 dni. Po wyjęciu osuszyć Potem można np. zawinąć w boczek pikantny farsz. Boczek upiec lub ugotować

Uratanie dziekuje za przepis .Boczek upieklam ,smakowal wszystkim.Nie dodalam tylko koledry bo nie mialam ale mysle ze boczek nie stracil na smaku-ale moze sie myle/?napewno jeszcze bede robila ale juz z koledra. pozdrawiam

Kolendra nadaje bardzo ciekawy aromat, podobny do świeżo mielonego pieprzu, ale bez ostrości
