Keczup z cukinii

Ingredients:

1,5 kg obranej cukinii
0,5 kg obranej cebuli
1,5 szklanki cukru
1 szklanka octu
400 g koncentratu pomidorowego
1,5 stołowej łyżki soli
1 łyżeczka słodkiej papryki
1 górowata łyżeczka pieprzu cayenne (lub mniej jeśli wolisz ketchup łagodny)
1 łyżeczka pieprzu

Prepare instructions:

Cukinię i cebulę pokroić w kostkę. Zasypać solą (ja przez przypadek zasypałam cukrem i też wyszło:), wymieszać i odstawić na 6 godzin.
Po tym czasie, nie odlewając powstałego soku, gotować aż do powstania jednolitej papki lub po jakimś czasie zmiksować.
Wsypać cukier i wlać ocet, zamieszać. Gotować 20 minut.
Dodać koncentrat pomidorowy i przyprawy. Gotować kolejne 20 minut, od czasu do czasu mieszając.

Z przyprawami można trochę poszaleć, możemy dodać czosnek zioła prowansalskie lub inne ulubione dodatki.
Zdjąć z ognia, zmiksować na wolnych obrotach, aby uzyskać bardziej keczupową konsystencję można przetrzeć przez sito po zmiksowaniu. Nalewać do słoiczków.

Pasteryzować przez ok 10 minut.

Faktycznie niemal indentyczny. Nie widziałam go wcześniej.

Zrobiony, a dzisiaj właśnie robię drugi raz. Keczup pycha jadłam łyżeczką ze słoiczka tak mi smakował - smak zbliżony do Kotlina i Pudliszek. Przepis poszedł w świat. Teraz dam obrobinę mniej octu i cukru- ale to moje smaki i każdy powinien dopracować "bazę" pod swoje gusta.
