Słodkie racuchy

Ingredients:

Składniki na 24 porcje:

- 20 dag twarogu
- ok. 1/2 szkl. mleka
- 2 jajka
- 10 dag mąki
- cukier waniliowy
- 3 łyżki cukru
- olej do smażenia
- konfitura wiśniowa lub inna według uznania

Prepare instructions:

Białka jajek oddzielić od żółtek. Twaróg pokruszyć, umieścić w wysokiej misce lub rondlu. Dodać żółtka, dosypać cukier i cukier waniliowy, dodać mleko. Całość zmiksować na jednolitą gładką masę. Następnie wymieszać z mąką. Z białek z dodatkiem szczypty soli ubić sztywną pianę i ostrożnie ale dokładnie wymieszać z masą serową.
W głębokiej patelni dobrze rozgrzać olej. Ciasto serowe nabierać łyżką i układać na oleju, formując malę racuszki. Na średnim ogniu smażyć je z obu stron na złoty kolor (po ok. 2-3 min). Gotowe racuszki przekładać na talerz wyłożony bibułą, aby osączyć je z nadmiaru tłuszczu. Trzymać w cieple.
Gotowe racuszki, tuż przed podaniem, obficie oprószyć cukrem pudrem. Podawać z konfiturą wiśniową lub inną ulubioną przez dzieci. Jako dodatek można też serwować sos czekoladowy (polane sosem czekoladowym najlepiej smakują podane z porcyjką świeżych owoców, np., jeżyny, maliny, truskawki itp.) albo każdy racuszek posmarować nuttelą. Dobrym sosem jest też płynny miód. Racuchy serwowane dorosłym warto "wzmocnić" i polać np. odrobiną ajerkoniaku lub malibu o smaku tiramisu.
